Old Tom is a style of gin that is slightly sweeter than London dry.
Boatyard Old Tom gin is made using a gin base that has been distilled in their Copper Alembic pot still. The collected spirit rests for 4 months in hand-picked first fill Pedro Ximenez sherry casks where the natural sweetness and richness of the sherry absorbs into the gin.
To finish the process a small amount of Pedro Ximenez sherry is added to give our spirit a velvety smooth feel.
A mouthful yet complex 100% organic Old Tom gin with notes of candied lemon peel, vanilla, cinnamon and a silky orange finish.
